Chicken Tenders

Hello blog.. I figured it was time I stopped abandoning you! A while ago, I made homemade chicken tenders. They're really super yummy, especially with ranch dressing on the side to dip them in! They don't take long to make at all, and they're a lot healthier than your average chicken tenders.
All you do is cut the chicken breast into strips, roll them in Italian breadcrumbs pictured above, put them in the oven, and you have yummy chicken tenders!
We had a yummy salad with it too. Nomnom!
My boy Jake was waiting for something to fall.. sadly for him, nothing did. :D
All ready to be eaten and dipped in yummy ranch and barbecue sauce. SO GOOD. Hopefully I didn't make you too hungry. :)

Chicken Fettuccine

I made a chicken fettuccine recipe ages ago and completely forgot to blog about it. So before I blog about tonight's recipe.. I'll do this one first!
It was reaalllyyy easy to make. First I chopped the red pepper and onion and then cooked it up with the spices.
Then I just added the cream and of course, cooked the pasta! Although I cooked it too long so it kinda evaporated so it wasn't as saucy as it should have been. But it was still really tasty!
I'll have to make it again sometime. Or another recipe. TONIGHT I made chicken tenders, and they shall be blogged about tomorrow. :)

Cheeseburger Pizza

I've neglected my blog, I know, I know. It's sad because I have sooo many pictures to post from the last two months! I'll start with this cheeseburger pizza Wendy and I made back in July. Yes, cheeseburger pizza. It is so incredibly delicious.
I browned the meat, added the onions and tomatoes, and while that was cooking, we put ricotta cheese on the dough.
We added the cheese and the hot peppers and popped them in the oven!
And that's a cheeseburger pizza. Super easy to make and so yummy! :)

How-To: Double Chocolate Chip Cookies

This week I decided to try a new cookie recipe! They are pretty, pretty good I have to say. So, the ingredients:
-1 cup butter
-1 cup white sugar
-1 cup brown sugar
-2 eggs
-1 tsp vanilla extract
-2 cups flour
-1 tsp baking soda
-1 tsp salt (I used a LOT less than that, I just sprinkled a little bit and they tasted fine!)
-1/3 cup cocoa powder
-3 cups chocolate chips

Pre-heat the oven to 350 degrees, and get your butter.
Mix it up until it's all creamy and fluffy looking.
Measure your brown and white sugar, and put it in the butter mixture and mix that all up.
Once that's all mixed, crack your two eggs, and put the teaspoon of vanilla in, then mix that.
Once that's done, get your flour, baking soda, salt and
cocoa powder, and mix that all up like so
Next, get your chocolate chips (I used mini ones because they're awesome!)
Stir those in the dough (nomnom)
Take a spoonful of dough and make it into a little ball, then put it on the cookie sheet for baking.
Bake them for about 11 minutes, take them out, let them cool, and voila! Freshly baked cookies! Enjoy them with an extremely large glass of milk - you'll need it. And that's it! Easy, no? They're simple and awesome. I'll be making these quite a lot. :)
IN OTHER NEWS..lots of stuff happening next week! I'm seeing Simple Plan on Monday, getting their new CD on Tuesday, packing the rest of the week, and leaving Montreal next Friday. Where am I going, you ask? Oh just a place called CALIFORNIA. I am so excited. I can't wait to blog about it, too! I'm there for ten days with SO many things planned, so I'm going to definitely need both of my memory cards and a full charged camera battery everyday. Disneyland, Seaworld, L.A./Hollywood, San Diego, Warped Tour, YOU NAME IT! It's gonna be awesome!

Passover Cooking

Last Wednesday, Wendy and I made matzo pizza. Basically you use matzo instead of dough. It's easy and yummy!
First we put tomato sauce
Topped it with kosher salami, mushrooms, onions and red peppers
Put on lots of cheese
Put it in the oven for a few minutes
And voila! Matzo pizza.

On Friday I made another Passover dish called fried matzo. It's also quite easy and yummy!
I started by breaking the matzo up into tiny pieces
I soaked the matzo until it got soft
Whisked four eggs with salt and pepper until..
..they became this.
Then I cooked the egg a little bit first, then threw the matzo in to let it fry with the egg, and that's it!
Then we enjoyed it. Nomnom.
Passover ends tomorrow afternoon, so no more of this for another year!

Homemade Mac 'n Cheese

I love all things pasta, but there's nothing I love more than a simple bowl of mac 'n cheese - ESPECIALLY homemade! So tonight, I made it homemade for the first time, and it was delicious if I do say so myself! :)
I mixed the milk, flour, salt and onion powder until it was all blended together, then brought it to a boil until..
 ..it got nice and thick!
Then I added the cheese and hot sauce.
Waited for it to melt into the sauce.
Mixed it in with the macaroni.
And ate it!
After dinner, I made Oreo stuffed chocolate chip cookies thanks to Sara and they are TO DIE FOR.
Straight out of the oven, mmmm.
Yes, they taste as good as they look. They're massive. And filling. And you cannot eat them without a glass of milk, take my word for it!

Baked Pasta

I'm getting used to this whole cooking thing, last night I made baked pasta with meat and cheese, a really easy and yummy recipe. Of course, I took pictures..

First I cooked the pasta, then cooked the meat with the garlic and spices..
 ..added the crushed tomatoes
..layered the sauce, pasta and cheese until the pan was full
..cooked it in the oven for 30 minutes
..let Jake out a million times while it was cooking
..took it out of said oven and let it cool
..and served it up!
Later on for a snack, none other than nutella on toast with a glass of milk. It's my routine, and it's awesome. Yum. Well, it switches between this and ice cream every now and then. Either way they're both awesome snacks. :D

Hope I didn't make you (too) hungry! ;)
